Kyushu's Local Flavor
Motsunabe is a Kyushu specialty. It's a hot pot (nabe) dish made out of tripe, garlic, cabbage, chives, and a spicy pepper called togarashi. This dish is a local favorite for its inexpensiveness and warmth.
It's usually cooked right on the table at restaurants and at home, and eaten with white rice. As with all Japanese nabe, after the meat and vegetables are eaten, extra rice or noodles are added to the broth, and motsunabe is no exception.
