Okinawa Soba is one of the most famous and popular dishes of Okinawa. You would be hard-pressed not to be able to find it while in Okinawa. Many of the restaurants that serve Okinawan cuisine serve it, and it is commonly eaten is many households as well.
The dish consists of wheat noodles instead of the popular buckwheat noodles used in most of Japan's traditional soba dishes. The noodles can differ from place to place, and across the islands of Okinawa. It can range from thick, flat noodles to thick and circular noodles. The toppings too can range, but the most common toppings you will find are green onions, pickled ginger, and pork - more specifically usually rafute. The broth is made from pork bones and bonito adding a depth to an otherwise light broth.
Locals and travelers alike enjoy Okinawa Soba, and this dish is very much a part of Okinawan culture. So make sure to give it a try next time you visit Okinawa!
