Beautiful white fish

Karei, or flounders are a species of flatfish, with both eyes on the same side of the head. Righteye flounders are so called because they have both eyes on the right side and lie on the sea bottom on their left side. Karei are found on the bottoms of oceansMost flounders are between 40-50 cm in length.

Shiroshita Karei is a type of karei found in the area of Oita, and they are amazing.

Karei is delicious when cooked, but the best way to enjoy them if resh sashimi. Karei sashimi is sliced into very thin slices, and youeat them with ponzu instead of soy sauce.

Add a little bit of kabosu to the ponzu, and then you will be enjoying the true Oita dish!
