Kabosu is a citrus fruit. It is popular in Oita, where its juice is used to improve the taste of many dishes, especially cooked fish, sashimi, and hot pot dishes. Sometimes it is used to substitute vinegar.

It looks similar to Sudachi, another Japanese citrus, but it can be distingushed by looking at the hole in apex of the fruit where the pistil has fallen off, which is slightly swollen donut shape.

You might wonder how you will be able to enjoy this fruit while you are in Oita, but there are couple of ways, first, you can find fruit juices at supermarkets and convenience stores in Oita. Another way is like the picture above, they might be served with fish plates where they usually place lemon!
